Summer Salad with Zingy Minty Dressing

Summer and salads go hand in hand – so why not try this super simple and super tasty fresh minty dressing on a salad of your choice.

This summer salad is great for Pitta, but if you are experiencing Vata imbalances I recommend avoid raw salads as it’s too difficult to digest for Vata types. If you don’t know your Dosha, (mind-body type), make sure to take my Dosha quiz here! 

Don’t stress too much about what to use for your salad – pick your favourites but try including cooling cucumber (augmenting vegetables) and leafy greens (extractive vegetables) if you can.

I mainly used ingredients straight from our garden, spinach, sprouted alfalfa, raw courgettes, raw fresh peas and some borage flowers to garnish!

Remember that salads are a little harder for us to digest – so you should try and eat them when your digestive fire ‘Agni’ is strongest (lunch and afternoon).

This recipe makes enough for a large family salad – double up if having a party! It stores well in the fridge for a couple of days as well.

Summer Salad with Zingy Minty Dressing

Ingredients for the Dressing

Handful of fresh mint leaves
Juice of 1 lemon
¼ cup (60 ml) extra-virgin olive oil
1 tablespoon honey
1 teaspoon Dijon mustard
1 clove garlic
Pinch or two of salt
Ground black pepper to taste

Summer Salad with Zingy Minty Dressing

Method

Pour all ingredients into a small blender.

Blitz until mint is finely chopped and ingredients are all combined.

Leave to stand for a few minutes to allow flavours to combine.

Drizzle over your favourite salad.

P.S. If you leave the dressing in the fridge it may separate – so give it a good stir before using again.
